A place built on connections

Doverodde once had a telephone exchange. A place where people sought a connection to one another and to the world outside. That story became the beginning of the name Centralen.

Today the connections are about something else.

About people around a table. About conversations that are allowed to take their time. About tastes, scents and moments that linger a little longer.

Centralen is housed in the old merchant's house by the fjord and is part of the community with SMK Thy and Naturlandsbyen.

It means a great deal to us to be part of a place where art, nature, food and people meet across boundaries. Where there is room for great experiences, spontaneous encounters and perfectly ordinary days around a table.

We do not simply want to be a place you visit. We hope to be a place you want to come back to.

We take care

For us a good meal begins long before it reaches the plate

It begins with those who grow, harvest, tend the animals and produce with respect for both the ingredient and the place.

That is why we work closely with local and Danish suppliers and let the season help set the direction in the kitchen.

We are working towards the silver Danish Organic Cuisine Label and partner with REFOOD to reduce food waste and use our resources thoughtfully. Not because it sounds right — but because it feels right to us.

The same goes for the people around the house.

We want to create a workplace with decent conditions, room to learn and a community you want to be part of. That is also why it means so much to us to help train the professionals of tomorrow — and we are proud to have already hired our first apprentice chef.

We do not believe in perfection. But we believe in taking care — every single day.

The taste of Thy

We work with the best seasonal ingredients from local producers, from field, sea and fjord.

People first

We believe in community, hospitality  and time around the table. There is room for everyone here.
